As one of the three crops included in the Las Tres Hermanas crops known as good crops to grow together, Squash is a very common feature of the Mexican-American diet. Various squash varieties provide Vitamin A, Vitamin B6, Vitamin C, Potassium and Manganese to one's diet, among other vitamins and minerals. It is also known to promote good blood pressure, blood sugar regulation and bone strength. It can be found in such dishes as Calabacita con Pollo, Empanadas, as well as Caldos or soups. Beto will show the community how to make a soup from squash typically harvested in the Fall season.
